About the Event
As obesity is becoming a huge problem in our world today, these kind of cookery courses must have a life-changing effect. Otherwise, what is the point one might ask? We are saturated with cooking and healthy living shows, bombarded with fad diets and confused daily by macros, meal plans and fat free, sugar-free junk food.
We want to make this course simple and effective. It was developed when Miranda was approached by a couple who were fed up with eating microwave meals and takeaways. They had, out of desperation to find a healthier choice of lifestyle and food, put themselves on the Dr Moseley Diet. What they wanted from this bespoke course was to combine what they had been cooking from the diet cookbook, with what they liked to eat on a regular basis and also add in a couple of easy recipes that would take them through the week.
“This course was brilliant fun and I loved every minute of teaching it, so I had to include it in our cookery school course list.” Miranda
How this course works: You have a discussion with Miranda about what you eat, like to cook and what ingredients you tend to buy and stock in your fridge, cupboards, larder and possibly what you grow in your garden. We are creatures of habit. We always buy the same things from the supermarket, butcher and vegetable shop.
Miranda will then come up with 5-7 dishes which you will cook together from scratch. This will invariably include a fresh tomato sauce and ratatouille to start. You will then roast an Organic chicken from Stream Farm in Broomfield, make a stock and a soup. You will cook some local and sustainably sourced fish from Phil Bowditch, en papilotte which you will learn to turn into her famous fish cakes or fish pie (If you eat meat and fish). You will roast off some vegetables to make some seriously good vegetarian burgers / patties. You will make either some wholemeal pastry or a delicious polenta crust for a good seasonal quiche or tart. When the stock is finished you will learn how to make a really good risotto. We always finish on a high with Elizabeth David’s chocolate mousse which is a seriously healthy chocoholics heaven. Amen.
Bring Tupperware as you get to take some of this home.
Please note: This is a bespoke course. It is tailored to what you like to eat and cook. It can be tailored to the diet that you are already on to make sure that you get a varied diet and stay on the wagon. We are not nutritionists, but if you would like an add-on package or introduction to a brilliant nutritionist and cook, we know someone who can help.
